RECIPE: Apple Cake with Streusel Topping (Apfel Kuchen mit Streusel)

2-1/4 cups flour

1/2 cup sugar

1/2 teaspoon baking powder

2 eggs

1/3 cup butter or margarine at room temperature

zest of 1 lemon

3-4 apples peeled and sliced

½ lemon (squeeze the lemon over apples to avoid browning)

1 heaping tablespoon sugar

1/2 teaspoon cinnamon


Mix the flour, sugar and baking powder together; make a well in the center and add the eggs and lemon zest.  Cut butter/margarine in slices over flour mixture. Knead the ingredients into a smooth dough. Wrap with plastic wrap and place in refrigerator for 30 minutes. Mix sliced apples with the sugar and cinnamon; set aside.

½ cup sugar

1 stick butter or margarine

1 teaspoon vanilla


Mix the dry ingredients together and add the butter and vanilla to a crumbly consistency; set aside. Press dough into a greased 10” spring form pan bringing it half way up the sides. Poke dough with fork. Place apple slices core side down tightly together covering the whole bottom Sprinkle streusel over the apples.

Optional:  Soak ½ cup of raisins in rum and add them on top of the apples before adding the streusel.

Bake 350 degrees for 35-45 minutes or until golden brown.
