1 cup butter (2 sticks)
1/2 cup brown sugar
13/4 cup flour
1/4 teaspoon salt (can omit)
1 teaspoon vanilla
3 eggs separated
1/2 cup chopped walnuts
favorite jam or preserves
Preheat oven to 375.
Mix the dry ingredients with the butter, vanilla and separated egg yolks.
From the ball of dough, make individual cookie balls each a teaspoon size.
Beat the egg whites in a small bowl. Dip the cookie balls into the egg-white mixture.
Dip each cookie ball into a bowl of finely chopped walnuts.
Arrange cookie balls on a greased baking sheet. Gently indent each cookie in the center.
Bake cookies for 10 minutes.
Remove from oven and fill each cookie indentation with the jam or preserves of your choice. Return to oven and bake another 2 minutes.
Remove from oven and let cool.
Yields 3 dozen cookies.
