RECIPE: Royal Mazurkas (Polish cookie)

1  cup butter at room temperature

¼  cup blanched, ground almonds

1½ cups all-purpose flour

1 teaspoon grated orange or lemon peel

1 sugar

¼ teaspoon salt

6 egg yolks

In a large bowl, cream butter until fluffy.  Mix flour, sugar and salt. Alternately beat 1 egg yolk and 1/6 flour mixture into butter. Continue until all ingredients are well combined.  Stir in orange peel and almonds and mix well. Roll or pat dough to fit a greased 15” by 10” by 1” jellyroll pan. Preheat oven to 325. Bake at 325 for 35-40 minutes or till golden, but not browned.  Cool in pan on rack for 10 minutes.  Cut into fourths and place on cooling rack.  After cookies have cooled, cut into 2-inch squares.  Yields about 3 dozen cookies.
